My second year in university all I ate one quarter was garlic hummus from trader joes and pita chips. Which then got expensive for a college student. I tried making my own in a blender and here we are. It is a super simple and quick receipe! As always let’s stop talking and get to it!

Ingredients:

  • 2 heads of garlic
  • 4 tablespoons extra-virgin olive oil
    • in 2 parts
  • 1 can of chikpeas drained and rinsed
  • 1 large lemon
  • 2 tablespoons tahini
  • Salt

Now let’s get cooking!:

  1. Preheat oven to 350ºF.
  2. Rub extra papery skin off of whole heads of garlic. Cut tips off each clove of garlic expose a bit of garlic.
  3. Lay root side down on a sheet of aluminum foil or in a small baking dish.
  4. Drizzle 2 tablespoons oil over the cut end of the garlic.
  5. Cover baking dish with foil.
  6. Roast until the garlic cloves are soft and fragrant.
    1. 45 minutes to 1 hour.
  7. Open foil and let sit until cool enough to handle.
  8. Squeeze the garlic cloves into a food processor.
  9. Add the remaining 2 tablespoons oil, chickpeas, lemon juice, tahini and salt and puree until completely smooth.
    1. about 1 minute.
  10. Serve. Store. and Enjoy!
